Almond and pear quick cake

The advantage with cakes is that since you put only good things in them, you do not take much risk creating new recipes or improvising on quantities! (Well it depends… My beloved siblings sometimes come up with surprising tastes and mixtures! But it is always worth trying)

Inspired from two of my recipes: Yoghurt cake and Financier, here is the recipe of the cake I made for a friend’s birthday and after exam treat!

Equipment: bowl, cake tin, oven

Ingredients: (1 measure = 1 volume of yoghurt)
– 1 yoghurt
– about 1/2 measure of honey (or 1 measure sugar)
– 1 1/2 measures of flour
– 100g of ground almonds
– 1/2 measure of melted butter About 100g
– 3 eggs
– 1 sachet baking powder
– 3 pears, peeled, diced

In a bowl, pour the yoghurt and keep the pot to use as a measure. Add the eggs and mix.
Add honey baking powder, almond and flour, mix. Add the butter and pears, mix.
Pour in a cake tin and cook in the oven at 180°C for about 20 minutes (to test whether it is ready, put a knife in the cake: it is ready if the knife remains dry)

Note: you can decorate the cake with flaked almonds (to spread before cooking)

Gâteau au yahourt (yoghurt cake)

Super easy and cheap cake. The recipe is a basic. Then you can be creative and add various flavours! Here I give the recipe with lemon.

Equipment: bowl, cake tin, oven

Ingredients: (1 measure = 1 volume of yoghurt)
– 1 yoghurt
– 1 measure of sugar (or 2 according to your taste)
– 3 measures of flour
– 1/2 measure of oil
– 3 eggs
– 1 sachet baking powder
-1 lemon (unwaxed if you want to use zest)

In a bowl, pour the yoghurt and keep the pot to use as a measure. Add the eggs and mix.
Add sugar, baking powder and flour, mix. Add the oil, lemon juice and lemon zest, mix.
Pour in a cake tin and cook in the oven at 180°C for about 20 minutes (to test whether it is ready, put a knife in the cake: it is ready if the knife remains dry)

Note:
You can replace lemon juice by fruits (pear, apple, ananas, …) or chocolate chip

Note bis: very good recipe for kids because it is very easy, they can do it alone and they love it!
Or for busy student who doesn’t have time and material to do fancy cakes 😉

Note ter: I just made it. I add only two eggs so I put two eggs and 2.5 measures of flour and it is very good, not dry at all! Super breakfast!

Lunchbox: better, healthier, cheaper!

Sick of sandwiches and sushis? Make your own lunch and bring it to uni/work.

There are a lot of reasons why it is a good idea:
– It is cheaper
– It is healthier
– You eat what you like
– All your classmates are gonna be jealous!

How can you do this?
Very simple. A lot of recipes I post can be prepared in advance and eaten cold. Just bring them to Uni in a box. If you have a microwave, it is always better warm. I’ll also post specific lunchbox recipes.

What you can do is also cook a large quantity of a dish in the evening so that you can have it for lunch the next day!

Spinach and Ricotta Quiche

Here is a nice and easy recipe. Ideal to bring for a potluck or in a buffet or simply to share with friends. Also a good idea for a lunchbox.

Preparation: 15 minutes

Servings: 4 to 6
Level: Easy
Cost: cheap (around £1.5/pers)

Equipment: oven, oven dish, large bowl

 

Ingredients:
– a roll of shortcrust pastry (ready, or recipe here)
– 3 eggs
– 200 g of spinach (fresh or frozen)
– 250 g of ricotta
– 30 g of grated parmesan
– salt, pepper, ground nutmeg (optional)

Pre-heat your oven 180-200° degrees celsius.
Roll out the pastry in an oven dish and bake for 10 minutes.

In the meantime, mix in a bowl the eggs, ricotta, parmesan, nutmeg, salt and pepper.
Whisk the mixture till it becomes homogeneous.
Defroze the spinach in the microvawe or in a pan on the hob or stir two minutes in an oiled pan on the hob if you are using fresh leaves. Then add to the mixture.
Pour the mixture on the pastry and bake for 20 minutes.
Leave to rest 5 minutes before serving.

Tips:
It can be eaten cold or hot
Good served with a salad
